This rich and hearty chicken dish is quick and easy to prepare and a perfect meal for cooler weather. It goes beautifully with rice, creamy mashed potato or fresh crunchy bread.



  • 3-4 chicken breasts 
  • 1 onion sliced
  • 2 tsp crushed garlic 
  • 1 capsicum sliced
  • ½ cup sundried tomato strips 
  • 2 tsp dried oregano 
  • 1TBS paprika 
  • Salt and pepper
  • ½ cup tomato puree
  • ½ cup chicken stock 
  • ⅓ cup cream
  • Parmesan cheese
  • Handful of spinach 
  • Chopped parsley 




  1. Brown the whole chicken breasts in a fry pan, then finish in a 180 degree oven until cooked through.
  2. While the chicken is cooking, make the sauce.

  3. Cook off the onion and capsicum in a pan with a splash of oil.

  4. Once soft, add garlic, sundried tomato, oregano, and paprika.

  5. Cook for 1-2 minutes until fragrant.

  6. Add in chicken stock, tomato puree and cream and let simmer.

  7. Once the sauce has thickened slightly, add salt and pepper to taste, a handful of spinach and some chopped parsley and give it a good mix.

  8. Pour sauce over sliced chicken, top with parmesan cheese and serve hot.
