Healthy, nourishing food and sharing meals together plays a big part at The Retreat NZ. Our fabulous cook Zoe shares one of her summer favourites for you to recreate at home. 

This simple yet delicious summer salad is perfect as a nutritious meal on its own, or to complement whatever you’re sizzling up on the BBQ.


What you’ll need:

  • Kale, finely chopped
  • Cabbage, finely chopped
  • Dried apricots, diced 
  • Chickpeas
  • Orange, peeled and sliced 
  • Sunflower seeds 
  • Pumpkin seeds 
  • Salt & pepper 

For the dressing:

  • 1 tsp seeded mustard 
  • 4-5 TBS white vinegar 
  • 1 TBS honey 
  • Splash of lemon juice 
  • Finely chopped parsley 
  • 4-5 TBS olive oil


  1. Roast the chickpeas in garlic, salt and pepper for around 10 minutes or until soft. Set aside to cool.
  2. Chop all the vegetables and place in a bowl.
  3. Mix through chickpeas, seeds and fruit.
  4. To make the dressing: mix together all ingredients adding the oil last to create a smooth consistency. 
  5. Drizzle dressing over salad just before serving.
  6. Garnish with orange slices and edible flowers.
