Sometimes the most delicious dishes are the simplest, and this succulent spiced chicken bento bowl is no exception.  

What you’ll need:

  • 3-4 chicken breasts 
  • 1 cup soy sauce 
  • 1 tsp garlic 
  • 1 tsp ginger
  • ½ tsp chili flakes (or more to your spice liking)
  • 1-2 TBS parsley finely chopped
  • salt & pepper to taste

Method:

Make the marinade by mixing together; soy sauce, garlic, ginger, chili, parsley, salt and pepper.

Place chicken in an ovenproof dish and pour over marinade.

Allow the chicken to marinade in the fridge for at least 1 hour.

Heat oven to 180C.

Place dish in the oven and bake for 25-30 mins or until chicken is fully cooked through.

Rest, slice and pour any leftover marinade from the dish over the chicken. Best served hot.

Serve this succulent chicken in a Bento bowl by combining:

  • Cooked rice
  • Shredded vegetables (such as capsicum, carrot, cucumber)
  • Edamame beans 
  • Pickled cucumber & onion 
  • Fresh herby hummus
  • Japanese mayo 
  • Fresh coriander

What you’ll need:

  • 1 tin of chickpeas drained and washed
  • 1 TBS tahini
  • Small handful of fresh parsley and coriander 
  • 1-2 tsp chili flakes 
  • Splash of lemon juice 
  • Salt & pepper  
  • 3-4 TBS olive oil 
  • Water 

Method:

Place all ingredients (excluding the water) in a food processor and blitz until the chickpeas start to break down. Gradually add small amounts of water while continuing to process until you reach the desired consistency. Add extra salt and pepper if needed. Serve and enjoy!
